Why Omar

Built on the restaurant floor


I was born in Tarquinia, Italy, and moved to Melbourne in 2012 with degrees in sales, marketing and psychology and one conviction: a restaurant sells an experience, not a plate.

Today I own and run three venues through ElPiet Group: Cosi Bar Ristorante and Cucinetta in South Yarra and Vaporetto in Hawthorn. Every week I do the costings, write the rosters, negotiate with suppliers and read the P&L, in businesses where being wrong costs me money.

I wrote Creating Emotions about the culture that makes that work, and I was a finalist for Best Young Italian Entrepreneur in 2018. The rebrands of Cosi and Vaporetto are the work people know me for.

With Andrea Abbondanza I host Dining Room Stories and co-founded The Hospitality University, where I teach the Profit and Scale Engines. This site is for owners who want that work done on their own numbers.

Who do you work with?

Owners of trading restaurants, bars and cafes doing roughly $1-2M a year, in Australia or remotely.

What does the Revenue Review cover?

Your P&L, menu costing and engineering, roster against covers, supplier terms and the five moves worth the most, with a 90-day plan.

Do you only work in Melbourne?

No. Most of the review is done on your numbers, remotely; Melbourne venues get a floor visit.

How is this different from my accountant?

Your accountant reports what happened. I run three venues and work on what changes next week.

Is The Hospitality University accredited?

No. It is a private business academy taught by operators; it issues no qualification.

What is Private Client?
